Skillet Berry Cobbler

  • This recipe is everything you could want in a dessert. This mixed berry cobbler recipe uses frozen berries which bake in their own juices and make a thick sauce that’s the perfect medium between tart and sweet. A super easy and super fluffy biscuit complements each bite with warm, buttery goodness. Top everything of with a dusting of powdered sugar and we are in H-E-A-V-E-N.

    Serves: 8 servings



    Ingredients
    •30 oz (4 cups) fresh or frozen mixed berries (I used strawberries, blackberries, and raspberries)
    •1½ tbsp melted butter
    •2 tbsp cornstarch
    •⅓ cup sugar
    •½ cup whole wheat flour
    •¼ cup white flour
    •3 tbsp sugar
    •1 teaspoons baking powder
    •¼ teaspoon salt
    •⅓ cup cold butter, cubed
    •¼ cup buttermilk
    •1 tsp vanilla extract

    Instructions
    ►In a medium-sized bowl, mix together the berries, melted butter, cornstarch and sugar. Set aside.
    ►In another bowl, stir together the flour, 3 tbsp sugar, baking powder, and salt. Cut in the butter using a pastry blender or a fork until the mixture is crumbly.
    ►Mix together the butter milk and vanilla extract, then pour the mixture into the flour mixture and gently stir till just combined.
    ►On a floured surface, knead the dough a couple of times and form it into a rectangle that's 1 inch thick. Cut the dough in half and then once more diagonally to make four triangles.
    ►If using mini skillets, place four of them on a baking sheet and evenly divide the berry mixture among them. If using a baking dish or large skillet, add all the berries to the dish/pan. Place a biscuit on top of each skillet (or evenly distributed if using a large skillet/pan)
    ►Bake for 20-22 minutes or until the biscuit is golden brown. Serve garnished with mint, powederd sugar, or ice cream!
